OYSTER MUSHROOMS 

Savory, with nutty with a meaty texture. Soft, velvety texture. Commercial cultivation began in Germany as a subsistence measure during World War I, now grown around the world. Commonly used as a side dish or as an alternative to meat. 

KING TRUMPET MUSHROOMS 

Native to Mediterranean region, the Middle East, and North Africa. Has widespread popularity in Asia. Rich umami flavor and meaty texture.

PIOPPINO MUSHROOMS 

Delicious to eat on its own or in a dish, it has a firm texture with a nutty earthy flavor. 

MAITAKE MUSHROOMS 

Native to China, Europe and North America. Grows at the base of old-growth trees, particularly oak and maple.Resembles tail-feathers of a hen. Rich, woodsy taste.

Native to North America, Asia and Europe. In the wild, grows on hardwoods in late Summer and Fall. Mildly sweet with tender texture, similar to crab or lobster.
